Tofu Sandwich

 
     

half a clove of garlic

 or as much as you desire

peeled and chopped

     

3 cups of chopped  leek

turmeric and black pepper as much as you desire

heat up a large pan

     

any type of vegetable oil that you like

put  as much oil as you desire

add leek and garlic with turmeric and black pepper

     

cook for a few minutes

add some maple syrup (optional)

continue cooking until it is fried

     

put that in a blender

use any vegan  sauce you like

add the sauce to the blender

     

blend until it is liquefied

tofu of your choice

sliced to thin pieces

     

put in a pan with no oil or water

flip them over until both sides are yellowish-brown

add the leek and garlic sauce

     

turn  them over and let them cook

add more sauce and turn over again

keep the lid on until it cooks

     

keep them aside

eggplant of your choice

peel them

     

slice them vertically

use the rest of the leek and garlic sauce

(if needed add some water)

cook the eggplant

     

cook until golden brown

put eggplant aside with the tofu

add a condiment of your choice to the toasted bread

     

cut the leek in thin slices

use vegan mayo

add the vegan mayo to the chopped leek

     

mix the mayo with the leek

mixture of kale and spinach

add your greens

     

add tomatoes and pickles

dress  the sandwich with the leek mixture

add the tofu

     

 

add the cooked eggplant

add vegan cheese if u like

it would be nice with a bowl of vegan soup
